Easy Banana and Chocolate Chip Loaf Cake
If you’re in the mood for something sweet but don’t want to spend all day baking, this banana and chocolate chip loaf cake is just the ticket! It’s simple, delicious, and the perfect way to use up those overripe bananas sitting on your counter. Plus, combining bananas with chocolate chips creates an irresistible treat that everyone will love - my baby massage mums go wild for it!!
Ingredients You’ll Need
2 ripe bananas, mashed
160g softened unsalted butter
160g caster sugar
160g self raising flour
2 eggs
1 teaspoon baking powder
100g chocolate chips
How to Make Your Cake
Start by preheating your oven to 180°C and grease and line a loaf tin.
In a mixing bowl, first combine the sugar and butter until light and fluffy, then add all of the remaining ingredients and beat it using the paddle on your Kitchen Aid, or a handheld electric food mixer or just a good old wooden spoon (this will take some time and strength!).
Place the ingredients in the loaf tin and bake it in the preheated oven for about 50 minutes or until the cake is golden brown and a skewer inserted into the centre comes out clean.
Let the cake cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely. Once it’s ready, slice it up and enjoy!

Tip
If you have overripe bananas but you don't have time to bake a cake, simply peel the bananas and put 2 in a bag, then when you do have the time to bake the cake simply take the bag of bananas out of the freezer and they thaw in no time at all. Overripe bananas can also be used in smoothies so next time you notice those bananas turning brown, you know exactly what to do - bake a banana cake or freeze them!
